Grilled Vegetable Kebabs

This is partly a Mediterranean inspired dish. My dad had got packets of spice mixes from the middle east and I wanted to experiment at it. I’ve tried to make the dish with the available ingredients at home, so that you don’t need to fish for them at the market. I’ve added in paneer (cottage cheese) cubes but you can switch to tofu for a complete vegan dish and skip the dip, else just grill few vegetables together and have it as a side for any meal. It’s absolutely simple and delicious.




  1. Olive oil 2tbps
  2. salt (to taste)
  3. 1 tsp pepper
  4. 1 and half tsp oregano
  5. Lemon juice (half lemon)
  6. 1 tsp paprika ( you can add it according to how spicy you want the dish to be)
  7. dried parsley or fresh ones( if you have access to it, though you can get more flavor when it’s fresh)
  8. coriander (optional for the garnish)
  9.  vegetables (I used capsicum, tomatoes and onion, they are the basics available in any kitchen)


  1. Zatar spice
  2. Sumac spice
  3. Cottage cheese or Tofu
  4.  Zucchini and Mushrooms


Make the marinade by mixing olive oil, oregano, salt, pepper, paprika, lemon juice, dried parsley, zatar and sumac. Make sure you don’t end up adding a lot of olive oil and making it too greasy(oily) to eat.

Marinate the vegetables of your choice and insert them into skewers. Grill it in the oven at 180 degree Celsius for 25 minutes. If you don’t have an oven don’t worry you can still make it. Place the skewers with the vegetables in a pan and grill till the edges become black.
