Pasta Two Ways- Part 1

Off late I’m updating two recipes on my blog, trust me it saves time and you the pain of going through two entirely different recipes. I decided that hereafter I’ll be putting up two recipes in one go. This is also a switch option when you feel you have the ingredients for the other recipe than the one you’ve chosen. These are two entirely amazing vegan recipes I’ll be posting and I shall also be giving you the vegetarian alternatives for a completely meatless Monday or any day. Pasta is a comfort food of all sorts and it can be had for dinner and lunch, I generally use gluten-free wheat pasta. I will also include footnotes on where to source certain ingredients that is not available in the regular Indian kitchen, though it’s completely optional to use them

Creamy Tomato Pasta (for one person)


This pasta might take quite some time and it’s not the under twenty minutes type.


  1. Olive oil
  2. Chilli flakes
  3. One clove of garlic, roughly chopped
  4. Any vegetables you want to saute ( I used tomatoes and Capsicum)

For the paste

  1. Almond milk or Regular milk or Cream (I used almond milk)
  2. Tomatoes chopped (for the puree) ( I used two medium ones, quantity depends on the number of servings)
  3. Rosemary sprigs (optional, it adds an amazing flavour)
  4. Italian seasoning
  5. A dash of sugar
  6. Saute some onions and garlic and tomatoes and keep aside

For the pasta

  1. One cup whole wheat pasta
  2. Water
  3. Salt


  1. Cook the pasta till al dente, Keep aside
  2. In a blender or mixer, Mix all the ingredients that is to be used for the paste except rosemary sprigs and the sautéed onions, garlic and tomatoes.
  3. In a pan pour this puree and simmer it for a while along with the rosemary sprig.
  4. After the pungent smell of raw tomatoes has gone add in the sautéed vegetables and mix it. At this stage you can add some soy sauce or mustard or chilli sauce, this is completely optional.
  5. In another pan saute the garlic, chilli flakes, capsicum, tomato or any vegetables of your choice till they become crispy or cooked.
  6. Add in the paste you’ve prepared, and mix it well and let it simmer. Add salt, pepper and any seasoning you have of your choice
  7. Add in the cooked pasta and let it cook for 5-10 minutes
  8. For the garnish add some olives (also optional)

Tip: The more creamier you want your pasta to taste, add in that much of almond milk or any other milk and cream. I’ve not given the exact quantity because all of us are blessed with different taste buds.

Simple Pasta 


Sounds simple and it really is. This is a slight variation to the Deliciously Ella app recipe, and it’s completely genius. I made this for my mother for dinner and it was a .hit She likes any food spicy, so I slightly added in a little lots of chilli that you can modify accordingly. The Miso paste here is completely optional, if you really want to use it and you’re living in India try ( they’ve some good miso paste online. All the sauces are easy to source online or some health food store nearby.


  1. Olive oil
  2. Chilli flakes
  3. 2 green chillies (one chopped for sauteing and the other to mix with the puree)
  4. Miso paste (optional)
  5. tomatoes (For puree and to saute)
  6. Soy sauce
  7. Tomato sauce
  8. Spinach and some vegetables of your choice
  9. Garlic
  10. Pasta (cooked till al dente)
  11. Salt to taste
  12. Any seasoning of your choice
  13. Pepper


  1. Saute chilli flakes, one chilli finely chopped, garlic in the olive oil.
  2. Add in any vegetable of your choice to saute, after the aroma of the garlic and other spices you sautéed sting your nostrils.
  3. Make a paste of the tomatoes and the chilli (garlic one small clove can be added though it’s completely optional)
  4. Add in the tomato paste, a handful of spinach and a teaspoon of miso paste. You can add any sauce of your choice to the mixture and cook till the spinach is wilted. I added in a little more of tomato sauce because this would be beyond spicy.
  5. Add in the cooked pasta and toss it in the sauce, cook it for some 10 minutes
  6. Season it with the seasoning of your choice ( I seasoned with oregano and italian seasoning)
  7. Garnish with olives (optional)

Tip: If you’re not a spice person completely skip the chillies in the paste making and sautéing step. Mushrooms can also be added to this recipe.
